VMware's ESX software is the core product behind Enterprise-level server virtualization. It builds on the foundation that was started in VMware Workstation, but runs natively on the hardware (sometimes called bare-metal virtualization). Resource scheduling is performed in the ESX kernel, providing light-weight context switching between virtual resources instead of running an entire OS running between the virtualization resources and the hardware like GSX, Virtual Server, and Workstation.
If you haven't used VMware's technology before, you should download their free Virtual Server product for Windows or Linux here. Virtual machines created in this software can be run in GSX, Workstation, and even ESX.
There are many reasons to use ESX instead of GSX, Virtual Server, or Workstation, but the primary reasons are performance, reliability, and scalability. ESX is natively much faster, more reliable because of technologies such as VMFS and VMotion, and more scalable using VirtualCenter to manage large farms of virtual machines. Another major feature of ESX is resource management and service guarantees, something that can't be done when the virtualization layer runs on top of another operating system.
